Asian Sesame Soba Noodle Salad

prep time: 10 mins  | cook time: 4 mins

Serves 6
  • 1 cup frozen shelled edamame (soy beans), thawed
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped salted cocktail peanuts for garnish

Step 1.

Cook noodles according to package directions and drain in colander under cold running water, tossing until completely cooled.

Step 2.

In large bowl, toss cooked noodles with Asian Sesame Peanut Sauce until coated.

Step 3.

Add carrots, edamame and cilantro and gently stir to combine. Garnish with peanuts.

*Make this sauce first. Just 5 ingredients and 5 minutes, so you can have this dish ready in 20 minutes.
• Add shredded rotisserie chicken or steamed shrimp for a protein packed main dish salad.
• No soba noodles on hand? Spaghetti noodles will work fine.
• Don’t love cilantro? You can substitute scallions

Directions and Ingredients for Asian Sesame Peanut Sauce


Serves Makes about 1 cup

  • 1/3 cup creamy peanut butter
  • 1/3 cup Panera Bread Asian® Sesame Vinaigrette Dressing
  • 1/4 cup rice vinegar
  • 3 tbsp. soy sauce
  • 1 tbsp. sriracha sauce


Step 1.

In large bowl, slowly whisk peanut butter with dressing until fully incorporated and smooth.

Step 2.

Whisk in vinegar, soy sauce and sriracha until smooth.

Step 3.

Store in an airtight container, refrigerated, for up to 2 weeks.

Tip: This is great drizzled on skewered Seared Sirloin or Roasted Turkey and broiled for a quick Satay and served on the side as a dipping sauce.
